- Preheat your oven to 180°C (350°F). Bring a large pot of salted water to a boil and cook the lasagna noodles until just tender, about 8 minutes. Drain and set aside.

- Heat olive oil in a skillet over medium heat. Sauté chopped onion and minced garlic until fragrant and translucent, about 5 minutes. Add ground meat and cook until browned and cooked through, about 10 minutes, stirring occasionally.

- In a mixing bowl, combine ricotta cheese with squeezed spinach, a pinch of nutmeg, and a splash of lemon juice if desired. Mix until smooth and evenly blended.

- Spread a thin layer of meat sauce at the bottom of your baking dish. Layer with cooked noodles, then spread a portion of the ricotta mixture over the noodles. Repeat these layers, ending with a layer of meat sauce topped with shredded mozzarella cheese.

- Cover the assembled lasagna with aluminum foil and bake for 25 minutes. Remove the foil and continue baking for another 10 minutes until bubbling and golden on top.

- Remove from the oven and let it rest for 10 minutes. Garnish with chopped parsley or spooky olives to add a festive touch.
Notes
For extra spooky effect, carve cheese into ghost shapes or use black olives to create eyes on the olives for a fun, festive look.
