- Peel and core the apples, then dice them into small chunks. Set aside.
- In a large mixing bowl, whisk together the eggs and sugar until the mixture becomes light and slightly frothy, about 2-3 minutes.
- Add the melted butter and vanilla extract to the egg mixture, and whisk until well combined.
- In a separate bowl, sift together the flour, baking powder, spices, and salt. Gradually fold this dry mixture into the wet ingredients, mixing gently until just combined.
- Gently fold the diced apples into the batter, ensuring they are evenly distributed without deflating the mixture.
