- Add the frozen pineapple chunks to your blender.
- Pour in the coconut milk and sprinkle in the shredded coconut for extra flavor and texture.
- Toss in a teaspoon of vanilla bean extract and add the sugar if you prefer a sweeter slushie.
- Secure the lid on your blender and blend on high until the mixture is smooth, thick, and creamy—about 30 to 45 seconds. You might need to stop and scrape down the sides once or twice.
- Check the consistency—if it's too thick, add a splash more coconut milk and blend briefly. If it's too thin, add a few more frozen pineapple chunks and blend again.
- Once the slushie reaches a creamy, spoonable texture with vibrant color, turn off the blender and give it a taste. Adjust sweetness if needed.
- Scoop the piña colada slushie into glasses or bowls, garnishing with a small pineapple wedge or a sprinkle of shredded coconut if desired.
- Serve immediately with a straw or spoon and enjoy this cool tropical treat.
Notes
For an extra creamy texture, switch to frozen coconut yogurt instead of coconut milk. Adjust sweetness by adding more or less sugar based on your preference.
