Ingredients

  • 8 ounces spaghetti pasta
  • 1 pound ground beef or ground turkey/chicken
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic minced
  • 1/2 cup parmesan cheese grated
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • 8 small canned olives sliced, for bloodshot veins
  • 1 cup mozzarella cheese shredded, for glowing effect

Equipment

  • Large pot
  • Skillet or frying pan
  • Mixing bowl
  • Cooking spoon
  • Small piping bag or plastic sandwich bag

Method

  1. Cook the spaghetti in a large pot of boiling salted water until al dente, then drain and set aside.
  2. In a mixing bowl, combine ground beef, breadcrumbs, grated Parmesan, minced garlic, egg, and a pinch of salt and pepper. Mix until all ingredients are well incorporated.
  3. Form the mixture into small meatballs, about the size of a golf ball, and set aside on a plate.
  4. Heat a skillet over medium heat, add a drizzle of oil, and cook the meatballs until browned all over and cooked through, about 10 minutes. Remove and set aside.
  5. Meanwhile, pour marinara sauce into a saucepan and warm over low heat. Add the cooked meatballs to the sauce and simmer for 10 minutes to meld flavors.
  6. Using a small piping bag or plastic sandwich bag with the tip cut off, pipe some shredded mozzarella onto the top of each meatball to resemble glowing eyeballs. Dot small circles of sliced olives onto the mozzarella to mimic bloodshot veins.
  7. Arrange the cooked pasta on serving plates, then spoon the hot marinara with the spooky meatballs over the top.
  8. Finish by adding additional sliced olives or garnishes if desired for extra creepy effects.
  9. Serve immediately to enjoy the creepy, gooey, and delicious Halloween Eyeball Pasta.
