- Preheat your oven to 180°C (350°F). Grease a 23cm (9-inch) round cake pan and line it with parchment paper.

- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt until evenly combined.

- In another bowl, combine buttermilk, vegetable oil, eggs, vanilla extract, and red gel food coloring. Mix with an electric mixer until the mixture is smooth and vibrant red, about 2 minutes.

- Pour the wet mixture into the dry ingredients and gently fold with a spatula until just combined. The batter will be thick and glossy, with a deep red hue.

- Pour the batter into the prepared cake pan and smooth the top with a spatula, ensuring even thickness.
- Bake in the oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean and the edges are slightly pulled away from the pan.
- Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a cooling rack to cool completely. The cake should feel firm and moist to the touch.
- Once cooled, spread a generous layer of cream cheese frosting over the top and sides of the cake, smoothing it out gently with a spatula.
